Fatty acids are a class of ester that result from the combination of alcohol with a fatty acid. When the alcohol part is hydrogenated, the fatty acid ester produces monolaurin, glycerol, or cholesterol esters. Diet foods such as red meat, poultry, and fish also contain this ester. Common dietary fats are also triglycerides converted to liquid or gel form by the body. HDL, LDL, and triglyceride are categories of fat, and each one is important to your overall health.

Monounsaturated fats are different from other fats in that they include both trans-fatty acids and poly-fatty acids. Oils that come from plants contain one or more monounsaturated fats. Those that come from animal sources tend to be poly-fatty acids. Foods that are rich in poly-fatty acids are usually high in calories, so they should be eaten in moderation. A good example of fat with a high level of poly-fat is margarine. Although it has a high saturated fat content, it contains poly-fatty acids that are beneficial to human health.
Fatty acid ester are also found in vitamin A, vitamin D, and vitamin E. Vitamin A is a fat-soluble vitamin, so it's good for your health as well. It works to maintain your skin, bones, cartilage, and hormones in good shape. Vitamin D and E are fat-soluble antioxidants, which are able to help rid the body of free radicals that can cause disease and create additional aging symptoms. Fatty acid absorption was one of the first discoveries regarding the benefits of adding this substance to diet. Since then, fatty acids have shown benefits in other areas, such as reducing age spots, protecting tissue repair, reducing skin wrinkles, and increasing skin elasticity.

Fatty acid supplements are available, either as oral supplements or as cream-based creams. Creams work better when used immediately after a meal because they can penetrate deeper into the skin
